1) Purchase
When you want to buy a squash, choose it firm. Its skin must be dull, hard without mold or soft part. Your squash should be heavy when you suppose it.
2) Conservation
Winter squash is kept for a long time. But, unlike other vegetables, they like heat between 15 and 20 ° C and they support the light.
If you keep them indoors at around 20 ° C, you can keep them for 3 months or maybe longer. If you put them in a cooler place between 10 and 15 ° C, you can keep them for up to 6 months. If you want to store several, do not overlay them, but let the air circulate around. Well stored, you can have it all winter.
It is not advisable to keep them in the refrigerator because they do not support the humidity. On the other hand if you have a piece left, surround it with cellophane film, put it in the part crisper. You can store it for about 4 days.
Squash freeze
The purées may be packaged in collective portions in hermetic or individual containers or sachets, for example in plastic glasses or in muffin molds. If you are used to certain recipes, freeze the quantity necessary to achieve them, remembering to indicate on the label the frozen quantity.
- all cooked preparations (soups, gratins, desserts, ...) can be frozen and kept for 3 to 6 months.
- you can peel them, cut them into cubes, blanch them and then freeze them on trays before bagging them. So you can keep them practically 1 year old.
